Belgian Chicons Au Gratin (endives Au Gratin) Recipe

Ingredients
  • pepper .
  • 4 endives .
  • 4 slices ham (not too thick, but not too thin) .
  • salt .
  • 2 tbsps flour .
  • 4 tbsps butter, divided .
  • 2 c milk .
  • 2 c grated swiss cheese .
  • 1 pinch nutmeg (optional)

Directions
  • Step #1 Cut the bottom part of the endives, & boil them in salted water, until tender.
  • Step #2 Prepare a bechamelle sauce:.
  • Step #3 Melt 2TB butter in a saucepan.
  • Step #4 Add flour & stir.
  • Step #5 Add milk a little at a time.
  • Step #6 Cook until thickened.
  • Step #7 Add grated Swiss cheese, salt, pepper, & nutmeg.
  • Step #8 (yes, nutmeg - you can leave it out if you would rather not have any).
  • Step #9 Drain the endives.
  • Step #10 Roll each endive in a slice of ham.
  • Step #11 Place in a rectangular baking dish.
  • Step #12 Pour the bechamelle over the rolled slices of ham.
  • Step #13 Sprinkle top more Swiss cheese over the sauce.
  • Step #14 Dot with remaining butter.
  • Step #15 Place under the broiler until golden.
