Ingredients

2 celery ribs, sliced .
1 lb ground beef round or ground turkey .
1 red pepper, sliced .
1 medium onion, sliced .
2 tbsps olive oil .
1 (28 oz) can crushed tomatoes .
1 medium zucchini, sliced .
1 (14 1/2 oz) can tomatoes (recipe ready) .
2 tbsps chili seasoning mix .
2 garlic cloves, minced .
2 tbsps brown sugar .
2 (14 1/2 oz) cans pinto beans, drained

Directions

Step #1 Heat olive oil in large stockpot.
Step #2 Add onion, red pepper, celery, & garlic.
Step #3 Saute until crisp, tender.
Step #4 add zucchini & saute for 2 min.
Step #5 Add chili seasonings & cook with veggies for 2 min.
Step #6 Add tomatoes, & beans.
Step #7 Bring to boil, then turn down to simmer.
Step #8 Meanwhile, In a large-ish skillet, brown meat & season this with salt & pepper to taste.
Step #9 Drain.
Step #10 Add meat to chili.
Step #11 Add brown sugar to chili & continue to simmer for about 45 min or until thickened.
