Peach Nectarine Pie Recipe

Ingredients
  • 2 lbs peaches, peeled if desired, cut into 1/4-inch thick slices .
  • 1 c sugar .
  • 2 tbsps fresh ginger, peeled & grated .
  • 2 lbs nectarines, cut into 1/4-inch thick slices .
  • your favorite pastry for double-crust pie .
  • 1 egg, lightly beaten .
  • 1 tbsp sugar .
  • 1/3 c cornstarch .
  • 1 tsp pumpkin pie spice

Directions
  • Step #1 Roll out bottom crust.
  • Step #2 Combine peaches,1 c sugar, pumpkin pie spice, nectarines,cornstarch, & ginger.
  • Step #3 Spoon peach mixture into crust.
  • Step #4 Roll out top crust & fit onto filled bottom crust.
  • Step #5 Cut steam vents into top crust.
  • Step #6 Brush top crust with beaten egg & sprinkle with 1 Tbsp sugar.
  • Step #7 Bake at 400F degrees for 15 mins.
  • Step #8 Reduce oven temperature to 375 & bake 1 hr,20 mins or until crust is golden & filling is bubbly.
  • Step #9 Cool on wire rack.
