Buffalo Chicken Lasagna Recipe

Ingredients
  • 1/2 c egg substitute .
  • 15 oz part-skim ricotta cheese .
  • 3/4 c crumbled blue cheese .
  • 12 pieces lasagna noodles (uncooked) .
  • 2 tbsps hot sauce (2 to 3 tbsps) .
  • 1 lb boneless skinless chicken breasts .
  • 1 1/2 c water .
  • 2 tbsps vinegar .
  • 4 c spaghetti sauce .
  • 3 garlic cloves, minced

Directions
  • Step #1 Spray a large skillet with cooking spray; place over medium-high heat until hot.
  • Step #2 Add chicken; sauté 4 mins.
  • Step #3 Drain well.
  • Step #4 Stir in spaghetti sauce, hot sauce, water, vinegar & garlic.
  • Step #5 In a small bowl, mix Ricotta cheese & egg substitute.
  • Step #6 Set aside.
  • Step #7 Spray a 9 × 13-inch baking pan with cooking spray.
  • Step #8 Spread 1 c of the sauce over the bottom of the pan.
  • Step #9 Arrange 4 pieces of lasagne (3 lengthwise, 1 widthwise) over the sauce.
  • Step #10 Cover up with 1 1/2 c of the sauce.
  • Step #11 Spread half the Ricotta mixture on top.
  • Step #12 Arrange another 4 pieces of lasagne over Ricotta, & top this with another 1 1/2 c of sauce.
  • Step #13 Spread remaining Ricotta mixture on top.
  • Step #14 Arrange final 4 pieces of lasagne over Ricotta mixture & cover with remaining sauce.
  • Step #15 Preheat oven to 350ºF.
  • Step #16 Cover up lasagne with foil wrap & bake for 1 hr 10 mins.
  • Step #17 Uncover lasagne, sprinkle blue cheese on top & bake an extra 5 mins uncovered.
  • Step #18 Cover up & let this stand 15 mins before serving.
