Caramelly Apple Muffins Recipe

Ingredients
  • 1/4 tsp ground cinnamon .
  • 2 tbsps softened butter .
  • 1 3/4 c all-purpose flour .
  • 1/4 c apple butter .
  • 1 small apple .
  • 2 tsps baking powder .
  • Streusel Topping .
  • 1/4 c cooking oil .
  • 3 tbsps brown sugar .
  • shortening or 12 paper baking c .
  • 3 tbsps all-purpose flour .
  • 1/4 tsp salt .
  • 3/4 c milk .
  • 1/3 c granulated sugar .
  • 2 tbsps caramel ice cream topping, if you like .
  • 1 egg

Directions
  • Step #1 Turn on the oven to 400F degrees.
  • Step #2 Grease 2 1/2-inch muffin pan c with shortening or line with paper bake c.
  • Step #3 Save until Step 6.
  • Step #4 Put flour, sugar, baking powder, & salt in a medium bowl.
  • Step #5 Stir with a wooden spoon to mix.
  • Step #6 Save until Step 5.
  • Step #7 Make the Streusel Topping.
  • Step #8 Save until Step 6.
  • Step #9 Using a vegetable peeler, carefully cut the skin off the apple (throw away the skin).
  • Step #10 On a cutting board use a sharp knife to cut the apple into 4 pieces.
  • Step #11 Cut out the core & cut apple into small pieces (you should have 1/2 c).
  • Step #12 Save until Step 5.
  • Step #13 Crack the egg into a small bowl.
  • Step #14 Beat with the fork until yolk & white are mixed together.
  • Step #15 Add milk, oil, & apple butter to egg.
  • Step #16 Beat with the fork until ingredients are well mixed.
  • Step #17 Add the egg mixture to flour mixture.
  • Step #18 Stir with the wooden spoon until dry ingredients are wet.
  • Step #19 Stir in sliced apple.
  • Step #20 (The batter should be somewhat lumpy, not smooth.
  • Step #21 ).
  • Step #22 Spoon some of the batter into each muffin c.
  • Step #23 Sprinkle top 1 rounded tsp of the Streusel Topping over each muffin top.
  • Step #24 Put muffin pan in oven.
  • Step #25 Bake about 20 mins or until muffins are golden & a wooden toothpick comes out clean.
  • Step #26 (To test for doneness, use hot pads to pull out oven rack.
  • Step #27 Stick toothpick in the center of one of the muffins; pull out toothpick.
  • Step #28 If any muffin sticks to it, carefully push the oven rack back into place using hot pads & bake the muffins a few mins more; test again.
  • Step #29 ) Turn off oven.
  • Step #30 Use hot pads to remove muffin pan from the oven.
  • Step #31 Place muffin pan on the cooling rack.
  • Step #32 Drizzle top of each muffin with caramel ice cream topping, if you like.
  • Step #33 Cool muffins on cooling rack about 10 mins.
  • Step #34 STREUSEL TOPPING: Put 3 tbsps all-purpose flour, 3 tbsps brown sugar, & 1/4 tsp ground cinnamon in a small mixing bowl.
  • Step #35 Stir with wooden spoon to mix, Use a fork or a pastry mixer with a chopping motion to mix in 2 tbsps softened butter until mixture is crumbly.
