Tangy Tomato Rubbed Steak Recipe

Ingredients
  • 1/2 c prepared sun-dried tomato pesto .
  • 1 lime, zested & peeled .
  • 1 tsp salt .
  • 1/2 tsp black pepper .
  • 1 1/2 lbs flank steaks

Directions
  • Step #1 Pierce steak all over with fork & season this with salt & pepper.
  • Step #2 In a 1-gallon Ziploc, mix sun-dried tomato pesto, lime juice & zest.
  • Step #3 Place steak in bag, seal & shake to coat meat with marinade.
  • Step #4 Refrigerate 3 hrs or overnight, turning bag frequently.
  • Step #5 Heat broiler or grill.
  • Step #6 Broil or grill meat for 10 mins, turning once, or until a meat thermometer reads 140°F for medium rare.
  • Step #7 Sprinkle top steak with salt & pepper to taste & drizzle with sun-dried tomato pesto, if desired.
  • Step #8 Let meat stand for 10 mins before slicing & serving.
