Step #2 Place the cheesecake ingredients in a food processor/blender & mix for 3 mins, until smooth.
Step #3 Place 12 foil wrap baking c on a baking sheet, or use muffin tins.
Step #4 Ladle the cheesecake batter into the c.
Step #5 Topping: Coarsely chop the chocolate, quarter the 12 caramels & chop the pecans; mix these together, & generously top each cheesecake c with this mixture.
Step #6 Be sure to keep the pieces of caramel toward the center, or the caramel will run out!
Bake in a preheated oven for 35 mins.
