South Beach Chicken And Raspberry Spinach Salad Recipe

Ingredients
  • 1 tsp honey .
  • 1/4 tsp fresh ground black pepper .
  • 1 papaya, peeled, seeded, & sliced or 2 medium nectarines, pitted & sliced .
  • 1/2 tsp orange rind, finely shredded .
  • 1/8 tsp salt .
  • 5 tbsps extra-virgin olive oil .
  • 1/4 c raspberry vinegar or white wine vinegar .
  • 1 c raspberries .
  • 8-10 c torn spinach or mixed greens .
  • 4 boneless skinless chicken breast halves (about 12 oz total)

Directions
  • Step #1 In a screw-top jar, mix the vinegar, orange peel, 4 Tbs f the oil, the honey, salt, & pepper.
  • Step #2 Cover up & shake well.
  • Step #3 Chill the dressing til serving time.
  • Step #4 In a med skillet, cook the chicken in the remaining 1 Tbs of oil over med heat for 8-10 min or til the chicken is tender & no longer pink.
  • Step #5 Turn the chicken often to brown evenly.
  • Step #6 Remove the chicken from the skillet.
  • Step #7 Cut into thin, bite-size strips.
  • Step #8 In a large bowl, toss together the warm chicken strips & the spinach or mixed greens.
  • Step #9 Shake the dressing well.
  • Step #10 Add the dressing & raspberries to the chicken mixutre.
  • Step #11 Toss lightly to coat well.
  • Step #12 Divide the chicken mixtures among 4 salad plates.
  • Step #13 Arrange the papaya slices on each plactew.
