Green Olive Pasta Recipe

Ingredients
  • 200 g canned mushroom slices .
  • 1 tbsp sliced dill .
  • 500 g dry linguine or dried tagliatelle pasta noodles .
  • 2-5 garlic cloves, crushed .
  • 200 g stuffed green olives .
  • 1 tbsp olive oil .
  • 2 tbsps canned sweetcorn .
  • salt, to taste .
  • 1 red sweet bell pepper

Directions
  • Step #1 Cook the pasta in boiling salted water for 10-12 mins until al dente.
  • Step #2 Meanwhile -- Slice the olives into 5-6 slices each (may sound time-consuming but it's not, really).
  • Step #3 Remove seeds from red bell pepper, quarter & slice finely.
  • Step #4 Drain mushrooms.
  • Step #5 When the pasta is cooked, drain in colander.
  • Step #6 Quickly heat all other ingredients in the olive oil (1-2 mins maximum).
  • Step #7 The idea is to take the chill off, not to cook! Serve vegetables spooned generously over pasta.
