Roasted Broccoli With Brazil-nut Pesto Recipe

Ingredients
  • 3 tbsps parmesan cheese, freshly grated .
  • 5 tbsps extra-virgin olive oil .
  • 1 large garlic clove, sliced .
  • 1/2 c flat leaf parsley, coarsely sliced .
  • 2 1/2 lbs broccoli, large stems discarded, cut into 4-inch-long florets .
  • salt .
  • 1/4 c brazil nuts, coarsely sliced .
  • 2 tbsps water .
  • fresh ground pepper .
  • 1/2 tsp lemon zest, finely grated .
  • 1 tbsp tarragon, sliced

Directions
  • Step #1 Preheat the oven to 500°.
  • Step #2 In a mini food processor/blender, tarragon, water, mix the parsley with the Brazil nuts, garlic & lemon zest & pulse to a coarse paste.
  • Step #3 Add 3 tbsps of the olive oil & the Parmesan & process to a slightly smooth paste.
  • Step #4 Spice up with salt & pepper.
  • Step #5 On 2 large, rimmed baking sheets, toss the broccoli florets with the remaining 2 tbsps of olive oil & spread in an even layer.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Roast the broccoli in the center of the oven for 8 mins.
  • Step #8 Switch the baking sheets & continue to roast for about 8 mins longer, or until the broccoli is browned & crisp-tender.
  • Step #9 Transfer the broccoli to a platter, drizzle the pesto on top & serve.
