Asparagus With Sesame-ginger Sauce Recipe

Ingredients
  • 1 tsp sliced fresh ginger .
  • 1 tbsp rice vinegar .
  • 1 tbsp tahini (pureed sesame seeds) .
  • 1 tbsp Splenda sugar substitute .
  • 1 tbsp peanut oil .
  • 1 pinch red pepper flakes .
  • 1 tbsp water .
  • 48 medium asparagus spears, trimmed, peeled, & cleaned .
  • 1 tbsp soy sauce

Directions
  • Step #1 In a food processor/blender, mix everything except the asparagus & mix thoroughly.
  • Step #2 Set aside.
  • Step #3 Cut the asparagus into 2 inch pieces, on the diagonal.
  • Step #4 Fill a large skillet half full of water; cover & bring to a boil.
  • Step #5 Add the asparagus & let simmer just until crisp-tender, approximately 4 to 5 mins.
  • Step #6 Drain well, but do not rinse.
  • Step #7 Transfer to serving bowl.
  • Step #8 Pour the sauce over the hot asparagus & toss to coat.
  • Step #9 Serve warm or at about room temp.
  • Step #10 Special note: This also works well with fresh green beans.
