Cran-bran Muffins Recipe

Ingredients
  • 1 tsp baking powder .
  • 1 large egg .
  • 1/2 tsp vanilla .
  • 1 c low-fat buttermilk (or 1 c fat-free milk mixed with 1 TBS of lemon juice) .
  • 1 1/2 c natural bran, 100% natural (not All-Bran) .
  • 1/3 c unsweetened apple butter .
  • 1/2 tsp salt .
  • 1/2 c dried cranberries .
  • 1 c all-purpose flour .
  • 1 tsp baking soda .
  • 2/3 c brown sugar, lightly packed

Directions
  • Step #1 Preheat oven to 375 & grease 12-c muffin pan (or use paper liners).
  • Step #2 Mix buttermilk with bran & set aside.
  • Step #3 Mix together apple butter, brown sugar, vanilla & egg.
  • Step #4 Add to bran mixture.
  • Step #5 Sift together flour, baking soda, baking powder & salt.
  • Step #6 Add to wet ingredients.
  • Step #7 Stir just until mixd.
  • Step #8 Fold in dried cranberries.
  • Step #9 Divide batter into 12 muffin c & bake for 12-15 mins, or until they test clean.
  • Step #10 Cool for 5 mins in pan, then completely cool upside down on wire rack.
  • Step #11 (this prevents soggy bottoms!).
