A Whole Chicken On The Grill Recipe

Ingredients
  • 1/2 tsp cayenne pepper .
  • 1/2 c tomato paste .
  • 1 whole chicken, well rinsed, patted dry, & untrussed (2 1/'2 to 3 lbs) .
  • freshy ground black pepper, to taste .
  • 1/2 c red wine vinegar (may use part balsamic) .
  • 1/2 c orange juice

Directions
  • Step #1 Prepare hot coals for grilling.
  • Step #2 Stir all the ingredients, except chicken, together in a bowl until smooth.
  • Step #3 Brush the chicken well with the sauce.
  • Step #4 Grill the chicken over low heat/flame, preferably covered, for about 1 hr & 10 mins(turn the chicken a quarter turn & brush it with sauce every 15 mins).
  • Step #5 Let the chicken stand 10 mins before carving & serving.
