Hot Orange Pudding (hsi-mi-chu-keng) Recipe

Ingredients
  • 1/4 c sugar .
  • 2 1/2 c cold water .
  • 1/2 c pearl tapioca .
  • 1 large orange

Directions
  • Step #1 Cover up the tapioca with 1/2 c of cold water in a small bowl.
  • Step #2 Let soak at least 4 hrs.
  • Step #3 Peel the orange & remove the white membrane.
  • Step #4 Cut the orange meat into small pieces.
  • Step #5 Combine 2 c cold water with sugar in a sauce pan.
  • Step #6 Bring to a boil over high heat, & stir until the sugar is dissolved.
  • Step #7 Drain the tapioca & slowly pour it into the saucepan, stirring constantly.
  • Step #8 Cook over med-heat/flame, for 2 mins, continually stirring, or until the pudding thickens.
  • Step #9 Stir in the orange pieces, & bring to a boil again.
  • Step #10 Serve hot.
