White Chocolate Pistachio Fudge Recipe

Ingredients
  • 1 c shelled roasted pistachios .
  • 2 tbsps fresh lemon juice .
  • 2 c sugar .
  • 10 oz white chocolate .
  • 1/4 tsp salt .
  • 1/4 c sweetened condensed milk .
  • 1 tsp vanilla

Directions
  • Step #1 In a 2 quart saucepan, sweetened condensed milk, mix sugar, lemon juice & salt to a boil over med-heat/flame.
  • Step #2 lower to simmer & cook for 20-30 mins, (236*).
  • Step #3 soft ball stage on candy thermometer.
  • Step #4 remove this from heat & wipe crystals from sides of pan with wooden spoon.
  • Step #5 add chocolate.
  • Step #6 DO NOT STIR.
  • Step #7 cool to lukewarm.
  • Step #8 about 110*.
  • Step #9 when thickened & smooth, add vanilla.
  • Step #10 fold in pistachios.
  • Step #11 pour this into 8x8" square buttered pan.
  • Step #12 cool & then cut into squares.
  • Step #13 to roast pistachios.
  • Step #14 spread in an 8"x8" pam & bake this at low temperature (250*) for 1 1/2 hrs.
  • Step #15 this fudge will keep in an air tight container for some time.
