Ingredients
1/4 c low-fat peanut butter .
dried chili powder (optional) .
1 tbsp water .
1 tbsp reduced sodium soy sauce .
1/3 c low-fat catalina dressing or low-fat russian dressing .
1 lb shrimp, peeled & de-veined
Directions
Step #1 Thread shrimp onto skewers.
Step #2 Mix peanut butter, salad dressing until smooth.
Step #3 Stir in water & soy sauce.
Step #4 Brush 1/2 of sauce on shrimp.
Step #5 Grill or broil for about 3-5 mins or until shrimp becomes opaque.
Step #6 Serve with remaining sauce for dipping.
Step #7 NOTE: If using wooden skewers be sure to soak for 1 hr beforehand.
