5 Minute Thai Shrimp Satay Recipe

Ingredients
  • 1/4 c low-fat peanut butter .
  • dried chili powder (optional) .
  • 1 tbsp water .
  • 1 tbsp reduced sodium soy sauce .
  • 1/3 c low-fat catalina dressing or low-fat russian dressing .
  • 1 lb shrimp, peeled & de-veined

Directions
  • Step #1 Thread shrimp onto skewers.
  • Step #2 Mix peanut butter, salad dressing until smooth.
  • Step #3 Stir in water & soy sauce.
  • Step #4 Brush 1/2 of sauce on shrimp.
  • Step #5 Grill or broil for about 3-5 mins or until shrimp becomes opaque.
  • Step #6 Serve with remaining sauce for dipping.
  • Step #7 NOTE: If using wooden skewers be sure to soak for 1 hr beforehand.
