Speedy Pork Cassoulet Recipe

Ingredients
  • 3/4 tsp thyme .
  • 1 tsp olive oil .
  • 2 (19 oz) cans white beans (kidney or navy, drained & rinsed) .
  • 3/4 tsp rosemary (crushed) .
  • 1/4 tsp pepper .
  • 3/4 c chicken broth .
  • 3/4 lb pork tenderloins (trimmed) .
  • 1/4 tsp salt .
  • 3 garlic cloves (sliced) .
  • 1 white onion (medium, sliced)

Directions
  • Step #1 Cut pork into 3/4 inch cubes.
  • Step #2 Sprinkle top with salt & pepper.
  • Step #3 Heat oil In a large-ish Dutch ovem over medium high heat.
  • Step #4 Add pork; saute 5 mins or until browned.
  • Step #5 Add onion & garlic; saute 5 mins.
  • Step #6 Stir in beans & spices, & bring to a boil.
  • Step #7 Cover up, reduce heat, & let simmer 10 mins, stirring every once in awhile.
