Poorman's Jambalaya Recipe

Ingredients
  • 1/2 tsp ground cumin .
  • 1 c green bell peppers, sliced .
  • 1 c converted rice, uncooked .
  • 4 tbsps butter or margarine .
  • 2 c andouille sausages, cut into chunks .
  • 1 1/2 c boneless skinless chicken breasts (cut into chunks) .
  • 1/2 tsp cayenne pepper .
  • Remaining Ingredients .
  • 1 1/2 c sliced onions .
  • 1 tsp garlic powder .
  • 1/2 tsp dried thyme leaves .
  • Spice up Mix .
  • 4 small whole bay leaves .
  • 1 tsp dry mustard .
  • 1 1/2 c sliced celery .
  • 1 tsp salt .
  • 4 c chicken broth .
  • 1 tsp black pepper

Directions
  • Step #1 Thoroughly mix season mix ingredients in a small bowl & set aside.
  • Step #2 In a large skillet (a cast iron if you have one) or a Dutch oven, melt butter over medium high heat.
  • Step #3 Add chicken breast chunks & sausage, cook 5 mins, stirring every once in awhile.
  • Step #4 Add onion, celery, bell pepper & season mix.
  • Step #5 Stir well & cook this until browned (about 10-12 mins), stirring every once in awhile & scraping the bottom of the pan.
  • Step #6 Stir in rice & cook 2 mins, stirring well.
  • Step #7 Add the chicken broth, stir well.
  • Step #8 Bring mixture to a boil; reduce heat & let simmer until liquid is absorbed (about 20 mins).
  • Step #9 Remove bay leaves & serve.
  • Step #10 NOTE: You may use shrimp or ham instead of chicken or a combination of any of the meats.
  • Step #11 I like to simmer mine on low for 1-2 hrs.
  • Step #12 Check & stir every once in awhile while its simmering & add extra broth or water if needed.
