Chocolate Cherry Cheesecake Recipe

Ingredients
  • Topping:
  • 1/2 (1 oz) square white baking chocolate
  • 4 (8 oz) packages cream cheese, softened
  • 2 tbsps butter (no substitutes)
  • 1 1/2 tsps shortening
  • Cheesecake:
  • 1/2 c sliced pecans
  • 1 c sugar
  • 2 tsps vanilla extract
  • 6 tbsps butter (no substitutes), melted
  • 4 eggs
  • 4 (1 oz) squares white baking chocolate, melted & cooled
  • 3 (1 oz) squares semisweet chocolate
  • 1 (10 oz) jar maraschino cherries, drained, rinsed & quartered
  • 2 c chocolate wafer crumbs

Directions
  • Step #1 In a bowl, mix chocolate crumbs & butter.
  • Step #2 Press onto the bottom & 1 in.
  • Step #3 up the sides of a greased 10-in.
  • Step #4 springform pan.
  • Step #5 Bake at 350 degrees F for 8 mins.
  • Step #6 Cool on a wire rack.
  • Step #7 In a mixing bowl, beat the cream cheese until smooth.
  • Step #8 Add sugar & vanilla; mix well.
  • Step #9 Add eggs; beat on lowish speed just until mixd.
  • Step #10 Stir in melted chocolate; mix well.
  • Step #11 Gently fold in cherries & pecans.
  • Step #12 Pour into crust.
  • Step #13 Bake at 350 degrees F for 50-55 mins or until center is almost set.
  • Step #14 Cool on a wire rack for 10 mins.
  • Step #15 Carefully run a knife around edge of pan to loosen; cool 1 hr longer.
  • Step #16 Refrigerate overnight.
  • Step #17 Remove side of pan.
  • Step #18 In a saucepan, melt semisweet chocolate, butter & 1 tsp shortening until smooth.
  • Step #19 Cool for 2 mins; pour over cheesecake.
  • Step #20 Spread over the top & let it run down the sides.
  • Step #21 Cool.
  • Step #22 In a small saucepan, melt white chocolate & remaining shortening.
  • Step #23 Drizzle over the top.
  • Step #24 Cool.
  • Step #25 Store in the refrigerator.
