Ingredients
1 tbsp cumin seeds, crushed .
1 lb rabbit tenderloin (8 to 10 pieces) .
2 tbsps roasted peanuts .
1 tbsp sliced cilantro .
1/2 lime, juice of .
2 oz coconut milk .
1 garlic clove, sliced .
1/4 c water .
1/4 c soy sauce .
6 oz coconut milk .
1 tbsp grated fresh ginger .
1 tsp Thai sweet chili sauce .
1 tbsp brown sugar .
2 tbsps vegetable oil .
Peanut sauce .
1/4 c smooth peanut butter .
1 tbsp brown sugar .
Marinade
Directions
Step #1 Combine the marinade ingredients & tenderloin in a non-reactive bowl & put in the fridge for several hrs.
Step #2 Soak wooden or bamboo skewers for 15 to 30 mins; thread the meat on the skewers.
Step #3 Grill over hot coals for four to five mins per side.
Step #4 Combine the ingredients for the sauce.
Step #5 Serve the skewers with the sauce.
