Rabbit Tenderloin Satay Recipe

Ingredients
  • 1 tbsp cumin seeds, crushed .
  • 1 lb rabbit tenderloin (8 to 10 pieces) .
  • 2 tbsps roasted peanuts .
  • 1 tbsp sliced cilantro .
  • 1/2 lime, juice of .
  • 2 oz coconut milk .
  • 1 garlic clove, sliced .
  • 1/4 c water .
  • 1/4 c soy sauce .
  • 6 oz coconut milk .
  • 1 tbsp grated fresh ginger .
  • 1 tsp Thai sweet chili sauce .
  • 1 tbsp brown sugar .
  • 2 tbsps vegetable oil .
  • Peanut sauce .
  • 1/4 c smooth peanut butter .
  • 1 tbsp brown sugar .
  • Marinade

Directions
  • Step #1 Combine the marinade ingredients & tenderloin in a non-reactive bowl & put in the fridge for several hrs.
  • Step #2 Soak wooden or bamboo skewers for 15 to 30 mins; thread the meat on the skewers.
  • Step #3 Grill over hot coals for four to five mins per side.
  • Step #4 Combine the ingredients for the sauce.
  • Step #5 Serve the skewers with the sauce.
