Power Bean Bars Recipe

Ingredients
  • 1/4 c margarine (nonhydrogenated) .
  • 19 oz white kidney beans .
  • 1 c flour .
  • 1/2 c raisins .
  • 2 tbsps ground flaxseed .
  • 1/2 c dried cranberries .
  • cooking spray .
  • 1 c brown sugar (packed) .
  • 1/4 tsp salt .
  • 1 large egg .
  • 1 tsp vanilla .
  • 1/4 tsp cinnamon (rounded) .
  • 1 tsp baking soda .
  • 1 tsp baking powder .
  • 2 c oats .
  • 1/4-1/2 c sliced walnuts or pecans

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Place oats in the bowl of a food processor/blender & pulse until it resembles coarse flour.
  • Step #3 Add flour, baking soda, baking powder,cinnammon & salt & process until mixd.
  • Step #4 Put beans into food processor/blender & pulse until pureed.
  • Step #5 Add butter, brown sugar, egg & vanilla & pulse until smooth, scraping down sides of bowl.
  • Step #6 Pour bean mixture into oat mixture & stir by hand until almost mixd; add raisins, cranberries, nuts & flaxseed & stir just until mixed.
  • Step #7 Spread the batter into a 9 by 13 inch pan that has been sprayed with a non-stick spray.
  • Step #8 Bake for 30 to 35 mins, until golden around the edges.
  • Step #9 Cool in the pan before cutting into bars.
