Ingredients
1/4 c margarine (nonhydrogenated) .
19 oz white kidney beans .
1 c flour .
1/2 c raisins .
2 tbsps ground flaxseed .
1/2 c dried cranberries .
cooking spray .
1 c brown sugar (packed) .
1/4 tsp salt .
1 large egg .
1 tsp vanilla .
1/4 tsp cinnamon (rounded) .
1 tsp baking soda .
1 tsp baking powder .
2 c oats .
1/4-1/2 c sliced walnuts or pecans
Directions
Step #1 Preheat oven to 350.
Step #2 Place oats in the bowl of a food processor/blender & pulse until it resembles coarse flour.
Step #3 Add flour, baking soda, baking powder,cinnammon & salt & process until mixd.
Step #4 Put beans into food processor/blender & pulse until pureed.
Step #5 Add butter, brown sugar, egg & vanilla & pulse until smooth, scraping down sides of bowl.
Step #6 Pour bean mixture into oat mixture & stir by hand until almost mixd; add raisins, cranberries, nuts & flaxseed & stir just until mixed.
Step #7 Spread the batter into a 9 by 13 inch pan that has been sprayed with a non-stick spray.
Step #8 Bake for 30 to 35 mins, until golden around the edges.
Step #9 Cool in the pan before cutting into bars.
