Bright Summer Salad Recipe

Ingredients
  • 4 tomatoes .
  • 1/3 c cilantro .
  • 1 tbsp sea salt or kosher salt .
  • 2 limes, juice of .
  • 1 jalapeno .
  • 1/3 large red onion (or 1/2 small) .
  • 1 c basil leaves .
  • 6 ears corn

Directions
  • Step #1 Clean corn, blanch three mins in boiling water.
  • Step #2 Transfer to extremely hot grill or grill pan & grill until there are deep brown grill stripes on the corn.
  • Step #3 (Alternately, just cook the corn on the grill.
  • Step #4 ) Slice corn from the cob, place this in bowl.
  • Step #5 Cut tomatoes to a 3/8" dice, add to corn in bowl.
  • Step #6 Peel & dice red onion to 1/4" dice or smaller.
  • Step #7 Add to bowl.
  • Step #8 Remove seeds, ribs & inner membrane from jalapeno, chop very fine.
  • Step #9 Add to bowl.
  • Step #10 Chiffonade basil; should be about 1/2 c after slicing.
  • Step #11 Add to bowl.
  • Step #12 Chop cilantro; should be a scant 1/4 c after chopping.
  • Step #13 Add to bowl.
  • Step #14 Add salt, add lime juice, toss.
  • Step #15 Chill if desired, or serve as soon as possible.
