Japanese-style Marinated Mushroom Salad Recipe

Ingredients
  • 1 tbsp peanut oil .
  • 1/2 c reduced sodium soy sauce .
  • Marinated Mushrooms .
  • 1/2 c mirin .
  • 1 red capsicum, deseeded, thinly sliced .
  • 3 cm piece ginger, peeled, grated .
  • 1 cucumber, halved lengthways, sliced .
  • 2 tsps sesame oil .
  • 600 g button mushrooms, trimmed .
  • 4 garlic cloves, crushed .
  • 100 g baby asian greens

Directions
  • Step #1 Make marinated mushrooms: Place soy, sesame oil, mirin, peanut oil, garlic & ginger in a glass or ceramic bowl, & stir until well-mixd.
  • Step #2 Add mushrooms & turn to coat.
  • Step #3 Cover up & put in the fridge for 3 hrs.
  • Step #4 Place Asian greens, cucumber, capsicum & marinated mushrooms In a large-ish bowl.
  • Step #5 Toss to mix.
  • Step #6 Serve as an accompaniment to lamb, beef or chicken.
