Lemony Glazed Carrots Recipe

Ingredients
  • 1 lb carrots, peeled & sliced (or 1 lb baby carrots) .
  • 3 tbsps brown sugar .
  • 1/2 tsp tarragon .
  • 1/4 tsp salt .
  • 3 tbsps butter .
  • 3 tbsps lemon juice

Directions
  • Step #1 Place carrots in saucepan & cover with water.
  • Step #2 Bring to a boil; reduce heat & cover & let simmer 10-12 mins, or until crisp-tender.
  • Step #3 Meanwhile, in a small saucepan, melt butter.
  • Step #4 Add brown sugar, lemon juice, salt, & tarragon.
  • Step #5 Bring to a boil, stirring constantly.
  • Step #6 Turn off heat.
  • Step #7 Drain carrots.
  • Step #8 Add hot lemon butter mixture to drained, cooked carrots & toss carefully.
