Dumplings With Ginger Dipping Sauce Recipe

Ingredients
  • 2 tbsps sugar .
  • 1 scallion, finely minced .
  • 1/4 tsp crushed red pepper flakes .
  • 1/4 c reduced sodium soy sauce .
  • For Dumplings .
  • 1 tsp dry sherry .
  • 1 tbsp sesame oil .
  • 1 tbsp sesame oil .
  • 1 scallion, thinly sliced .
  • 1 tsp grated peeled gingerroot .
  • 1 tsp cornstarch .
  • For Dipping Sauce .
  • 1 garlic clove, minced .
  • 1 (12 oz) package wonton skins (about 48) .
  • 1/4 c red wine vinegar .
  • 2 tsps grated peeled gingerroot .
  • 1 tbsp reduced sodium soy sauce .
  • 1/2 lb ground lean pork

Directions
  • Step #1 Bring a large pot of water to a boil.
  • Step #2 In a small bowl, mix the dipping sauce ingredients, stirring until the sugar dissolves; set aside.
  • Step #3 In a medium bowl, mix the pork, sherry, soy sauce, scallions, cornstarch, sesame oil, gingerroot & garlic.
  • Step #4 Place the wonton skins on a work surface & cover them with a damp towel.
  • Step #5 Remove the wonton skins 1 at a time & place about 1 tsp filling in the center; do no overstuff or the wontons won't seal securely.
  • Step #6 Moisten the edges of the wontons with water.
  • Step #7 Bring 2 opposite corners to the center, pinching the points to seal, then bring remaining 2 corners to center, pinching the points to seal.
  • Step #8 Repeat with the remaining wonton skins & filling.
  • Step #9 Add the wontons in batches (if you add too many at once they may stick together) to the boiling water.
  • Step #10 Stir carefully with a wooden spoon & bring back to a boil; boil 5 mins.
  • Step #11 With a slotted spoon, transfer the wontons to a platter.
  • Step #12 Serve with a dipping sauce.
