Grilled Pork Panzanella Recipe

Ingredients
  • 4 boneless pork chops, 1/2 inch thick .
  • 1 (10 oz) package italian mixed salad greens .
  • 3 tbsps balsamic vinegar .
  • 1 c canned cannellini beans, drained & rinsed .
  • fresh ground pepper, to taste .
  • 1/4 c finely grated parmesan cheese .
  • 1 c sliced ripe tomatoes .
  • 2/3 c bottled Italian salad dressing .
  • 4 slices Italian bread, cut 1/2-inch thick

Directions
  • Step #1 Combine Italian salad dressing & balsamic vinegar; place 1/3 c dressing mixture in resealable bag along with pork chops; seal bag & put in the fridge for at least 30 mins or as long as overnight.
  • Step #2 Cover up & reserve remaining dressing.
  • Step #3 Prepare grill to medium-hot.
  • Step #4 Remove chops from marinade & discard marinade.
  • Step #5 Grill over direct heat for 5 mins per side, until browned.
  • Step #6 Remove from grill & keep warm.
  • Step #7 Grill bread slices 2-3 mins per side until nicely toasted.
  • Step #8 Remove bread from grill & cut into 1/2 inch cubes.
  • Step #9 Meanwhile, mix lettuce, beans & tomato in large bowl.
  • Step #10 Add bread pieces & reserved dressing mixture; toss to coat.
  • Step #11 Slice pork chops & lay on top of salad.
  • Step #12 Garnish with black pepper & parmesan cheese.
