Step #1 Soak the beans overnight in water, drain & rinse.
Step #2 Cover up generously with fresh water & boil rapidly for about 10 mins, skim the foam off & let simmer for 1 1/4 hr or until cooked.
Step #3 Boil the potatoes in salt water until done, approximately 10-15 mins, drain, cover & set aside.
Step #4 Fry the bacon & shallots until bacon starts to crisp & shallots turn golden, set aside.
Step #5 When the beans are cooked, take about 1/3 of them out with a slotted spoon & set aside.
Step #6 Add the tomatoes to the rest of the beans & the 'bean water' & puree using a stick mixer or food processor/blender until fairly smooth.
Step #7 Depending on how much liquid you have from the beans you may want increase/decrease the amount of broth.
Step #8 Add the broth & stir, shallots, then add the peppers, sausages (if using), bacon (make sure you get all the juices from the pan), potatoes & the rest of the beans.
Step #9 Spice up to taste with the above spices & the garlic (if using) & let simmer for another 30 mins until all the flavours have mixd & everything is heated through.
Step #10 Serve with crusty bread.
Step #11 The flavours are even better the next day, as with many bean or lentil soups.
