Grilled Pork Tacos With Papaya Salsa Recipe

Ingredients
  • 10 corn tortillas (cooked in oil) .
  • 1/2 c fresh pineapple, sliced .
  • 1/2 c red bell peppers, sliced .
  • 1 1/2 c monterey jack cheese, shredded (6 oz) .
  • 2 tbsps lime juice .
  • PAPAYA SALSA .
  • 1/2 c fresh mint leaves, sliced .
  • 1 small red chili, seeded & fine sliced .
  • PORK MIXTURE .
  • 1 papaya, peeled, seeded, cut in 1/2 inch cubes .
  • 2 tbsps margarine or butter, melted .
  • 1/4 lb boneless center cut pork loin roast, cut in 2x1/4 inch strips .
  • 1/2 c fresh papayas, sliced .
  • 1/2 c red onions, sliced

Directions
  • Step #1 Salsa: Mix all ingredients.
  • Step #2 Cover up & put in the fridge about 30 mins or until chilled.
  • Step #3 Makes 3 c salsa.
  • Step #4 Cook pork in 10-inch skillet over med-heat/flame about 10 mins, stirring every once in awhile, until no longer pink; drain.
  • Step #5 Stir in papaya & pineapple.
  • Step #6 Heat, stirring every once in awhile, until hot.
  • Step #7 Heat oven to 425°F Spoon about 1/4 c of the pork mixture onto half of each tortilla; top this with about 2 tbsp of the cheese.
  • Step #8 Fold tortillas over filling.
  • Step #9 Arrange five of the filled tortillas in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch; brush with melted margarine.
  • Step #10 Bake uncovered about 10 mins or until light golden brown.
  • Step #11 Repeat with remaining tacos.
  • Step #12 Serve with Papaya Salsa.
