Ingredients
250 g butter, chilled & sliced .
1 tsp ground cinnamon .
cinnamon .
150 g sugar .
300F g ricotta cheese .
Filling .
250 g plain flour .
2 tbsps sugar .
4 egg yolks .
To Serve .
honey .

Directions
Step #1 TO make pastry:.
Step #2 Combine flour & sugar together in food processor/blender, then add butter & process until dough forms.
Step #3 Add a little water if necessary.
Step #4 Wrap dough in plastic & put in the fridge for 30 mins.
Step #5 To make filling:.
Step #6 Combine sugar & ricotta.
Step #7 Add egg yolks one at a time.
Step #8 Mix until smooth.
Step #9 Add cinnamon & mix well.
Step #10 To make:.
Step #11 Preheat oven to 200 Degrees Celsius.
Step #12 Roll out dough thinly & cut into 14 cm squares.
Step #13 Place a spoonful of mixture in centre of each square & fold over the corners, leaving some filling visible.
Step #14 Place cakes on buttered baking tray & bake 20 mins until golden brown.
Step #15 To serve:.
Step #16 Dust cheescakes with cinnamon & drizzle with honey.
Step #17 Serve warm.
