Portugese Cheescakes With Cinnamon And Honey Recipe

Ingredients
  • 250 g butter, chilled & sliced .
  • 1 tsp ground cinnamon .

  • 150 g sugar .
  • 300F g ricotta cheese .
  • Filling .
  • 250 g plain flour .
  • 2 tbsps sugar .
  • 4 egg yolks .
  • To Serve .
  • honey .
  • Pastry

Directions
  • Step #1 TO make pastry:.
  • Step #2 Combine flour & sugar together in food processor/blender, then add butter & process until dough forms.
  • Step #3 Add a little water if necessary.
  • Step #4 Wrap dough in plastic & put in the fridge for 30 mins.
  • Step #5 To make filling:.
  • Step #6 Combine sugar & ricotta.
  • Step #7 Add egg yolks one at a time.
  • Step #8 Mix until smooth.
  • Step #9 Add cinnamon & mix well.
  • Step #10 To make:.
  • Step #11 Preheat oven to 200 Degrees Celsius.
  • Step #12 Roll out dough thinly & cut into 14 cm squares.
  • Step #13 Place a spoonful of mixture in centre of each square & fold over the corners, leaving some filling visible.
  • Step #14 Place cakes on buttered baking tray & bake 20 mins until golden brown.
  • Step #15 To serve:.
  • Step #16 Dust cheescakes with cinnamon & drizzle with honey.
  • Step #17 Serve warm.
