Cardamom Infused Chicken With Rice(saleek) Recipe

Ingredients
  • 2 tsps salt (to taste) .
  • 2 pieces gum arabic (mastikah Do not leave it out) .
  • 4 c water .
  • 7 green cardamoms (peel the skin slightly so seeds can fall out) .
  • 3 tbsps ghee .
  • 3/4 c basmati rice .
  • 2 c milk .
  • 1 1/4 kg chickens, with skin on, disjointed & washed

Directions
  • Step #1 Boil chicken in the water with cardamoms & salt, untill soft & tender.
  • Step #2 (1 hr).
  • Step #3 Remove chicken to an oven tray.
  • Step #4 Strain chicken broth into a big bowl and.
  • Step #5 pour back into the cooking pot.
  • Step #6 Add rice to the broth, taste for salt.
  • Step #7 cook rice till extreamly soft & mushy.
  • Step #8 Add milk & let simmer for 10 mins, stirring continually on low heat.
  • Step #9 Heat ghee & mastikah in a saucepan on the stove till mastikah melts.
  • Step #10 (it would not work in the microwave).
  • Step #11 Add melted mastikah to the rice & mix well.
  • Step #12 Switch heat off close pot & rest for 10 mins.
  • Step #13 Pop chicken under the grill to redden.
  • Step #14 Place rice onto serving plate arrange chicken over the rice.
