• 1 tsp onion powder .
• 6 boneless skinless chicken thighs .
• 1/4 c breadcrumbs .
• 3 tbsps cilantro, divided & finely sliced .
• 1 tbsp curry powder .
• 1/2 tsp paprika .
• 1 tsp salt .
• 2 tsps garlic powder .
• 1/2 c peanuts, finely sliced .
• 1/4 tsp pepper .
• 1 green onion, sliced

• Step #1 Preheat oven to 400F degrees.
• Step #2 In a bowl or plate, mix peanuts, curry powder, paprika, onion powder, garlic powder, bread crumbs, salt, pepper & 2 tbsp of cilantro.
• Step #3 Coat chicken with mixture & place on baking sheet.
• Step #4 Make sure the chicken is well coated with the peanut mixture! Bake for 25-35 mins until juices run clear.
• Step #5 Serve over rice or noodles & top this with remaining cilantro & sliced green onion.
