Pesto Lasagna (spinach & Cheese) Recipe

Ingredients

16 oz shredded mozzarella cheese (6 c) .
1 (16 oz) package lasagna noodles, partially cooked according to package directions .
1 1/2 c onions, sliced .
3 oz parmesan cheese, grated (3/4 c) .
salt, to taste .
3 garlic cloves, finely sliced .
3 tbsps olive oil .
30 oz frozen sliced spinach, thawed & squeezed dry .
pepper, to taste .
24 oz ricotta cheese (3 c) .
1 1/2 c pesto sauce .
1/2 c pine nuts, toasted

Directions

Step #1 Preheat oven to 350°F.
Step #2 Oil 13"x9" casserole dish.
Step #3 In a large skillet, heat olive oil.
Step #4 Sauté onion & garlic until onion is transparent.
Step #5 Add spinach; cook, stirring constantly for 5 mins.
Step #6 Spice up with salt & pepper.
Step #7 Transfer to a large bowl.
Step #8 Add ricotta, Parmesan, pesto, & pine nuts to spinach; mix well.
Step #9 Layer 5 lasagne noodles in bottom of casserole dish, slightly overlapping each other.
Step #10 Top with 1/3 of spinach mixture & 1/3 of mozarella cheese.
Step #11 Repeat layers twice.
Step #12 Bake until hot & bubbly (35 mins).
