Ingredients
1 pinch salt .
500 g unsalted butter, softened .
610 g plain flour .
250 g icing sugar (confectioners' sugar) .
5 egg yolks
Directions
Step #1 Using an electric mixer with a paddle, mix the dry ingredients & add the butter in pieces, then slowly add the egg yolks.
Step #2 When the pastry comes together, remove this from the bowl.
Step #3 Divide the pastry into workable amounts.
Step #4 Cover up with plastic wrap & chill to a workable temperature.
Step #5 (Note: This pastry can be frozen).
Step #6 Below: Example using 650 grams of dough.
Step #7 Preheat the oven to 180 C (360 F).
Step #8 Roll the pastry out to 5mm thickness & butter a 20cm x 5cm (8in x 2in) flat tin.
Step #9 Line the tin with the pastry & then line the pastry with aluminium foil wrap.
Step #10 Fill with pastry weights or beans & bake blind for 20 mins or until the pastry is golden brown in colour.
Step #11 Allow to cool.
Step #12 Pour your mix into the cooled pastry case, leaving a bit of room at the top & cook tart according to the recipe.
