Raspberry And Cocoa Mascarpone Cream Pie Recipe

Ingredients
  • 8 oz mascarpone cheese .
  • 3 tbsps seedless raspberry jam .
  • 1 tbsp unsweetened cocoa powder .
  • 1 pint fresh raspberries .
  • 1 (9 inch) chocolate cookie pie crust (Chocolate Cookie Crust #134516) .
  • 1/4 c powdered sugar .
  • 1/2 c heavy cream, chilled

Directions
  • Step #1 Spread the jam across the bottom of the prepared pie crust using a small rubber spatula; put in the fridge crust while continuing with the recipe.
  • Step #2 In a large mixing bowl, powdered sugar, & cocoa; using an electric mixer, mix the mascarpone, cream, beat the mascarpone mixture until it is smooth.
  • Step #3 Spread mascarpone mixture over the jam.
  • Step #4 Cover up with plastic wrap & put in the fridge until the filling is completely set.
  • Step #5 Right before ready to serve, place as many raspberries on top of the cocoa mascarpone.
  • Step #6 Put slices of pie on dessert plates; scatter any remaining berries around each slice.
