Step #1 Place the chickpeas & water into a food processor/blender, & process until the mixture is the consistency of a coarse paste.
Step #2 Heat 1 tbsp of olive oil In a large-ish non-stick pan over a medium heat, stirring, garlic & leek until they have softened, for another min; then add the sliced spinach for about 1 min, still stirring, & sauté the onion, about 4 mins; then add the cumin & sauté, until the spinach begins to wilt.
Step #3 In a large bowl, cheese, carrot, onion mixture, mix the chickpea paste, eggs & wheat germ; & season to taste; then shape into 4 even-sized patties.
Step #4 Heat the remaining oil in the same pan that was used earlier, & cook the burgers until golden, about 2 mins on each side; then drain on paper towels.
Step #5 Serve in a crispy roll with hummus or tzatziki & salad greens.
