Ingredients
1 1/3 c sugar .
1/2 tsp vanilla extract .
3/4 c whipping cream .
Topping .
2 tbsps confectioners' sugar .
1 (16 oz) can whole berry cranberry sauce .
1/3 c butter, melted .
4 (8 oz) packages cream cheese, softened .
1 tbsp cornstarch .
2 tbsps instant coffee granules .
1 (9 oz) package chocolate wafer cookies, crushed .
1/4 c whipping cream .
4 eggs .
1 tbsp hot water .
1 tbsp flour .
Filling .
1 1/2 tsps ground cinnamon
Directions
Step #1 Combine cookie crumbs & butter; press onto the bottom & 2 inches up the sides of a greased 9 inch springform pan; set aside.
Step #2 In a mixing bowl, beat cream cheese until smooth.
Step #3 Combine sugar & flour; add to cream cheese & mix well.
Step #4 Add eggs; beat on lowish speed just until mixd.
Step #5 In small bowl, dissolve coffee in water; add cream & cinnamon.
Step #6 Stir into the cream cheese mixture just until mixed.
Step #7 Pour over crust.
Step #8 Place pan on a baking sheet.
Step #9 Bake at 350 for 50-55 mins or until center is almost set.
Step #10 Cool on a wire rack for 10 mins.
Step #11 Carefully run a knife around edge of pan to loosen; cool 1 hr longer.
Step #12 In a large saucepan, bring cornstarch & cranberry sauce to a boil.
Step #13 Cook & stir for 2 mins or until thickened.
Step #14 Cool.
Step #15 In a small mixing bowl, beat cream & vanilla until soft peaks form.
Step #16 Gradually add confectioners sugar, beating until stiff peaks form.
Step #17 Spread over the cheesecake.
Step #18 Refrigerate 20 mins or until set.
Step #19 Carefully spread 1 c of cranberry mixture to within 1 inch of edge; cover & put in the fridge remaining cranberry mixture.
Step #20 Refrigerate cheesecake overnight.
Step #21 Just before serving, remove sides of pan.
Step #22 Serve with the remaining cranberry mixture.
