Hushpuppies (wheat-free) Recipe

Ingredients
  • 1 1/2 c cornmeal .
  • 3 tsps seasoning salt .
  • milk or water or apple juice, to make doughy .
  • 1 egg .
  • chives or green onion tops .
  • 1/4 tsp cayenne pepper .
  • 3 tsps baking powder .
  • 1 c rice flour .
  • 1 medium onion .
  • 1 tsp garlic powder .
  • 3/4 tsp black pepper

Directions
  • Step #1 Combine dry ingredients in a bowl, break up any lumps.
  • Step #2 Stir in onions, green onions, & chives.
  • Step #3 Add egg & mix well.
  • Step #4 Add liquid until batter is thick enough to form into balls, but not runny.
  • Step #5 In a large skillet or deep fryer, heat 4" oil to 350 degrees F or 180 degrees Celsius.
  • Step #6 Form batter into 3/4" to 1" balls & drop into the hot oil (use two spoons to form them with).
  • Step #7 Do not crowd.
  • Step #8 Cook until dark golden brown & cooked through, about 2 mins.
  • Step #9 Drain on paper towels.
