Drunken Eggs Toast Recipe

Ingredients
  • 2 thick slices egg bread
  • 3 tbsps mascarpone cheese
  • 1/2 c real maple syrup
  • 2 tbsps brandy-based orange liqueur (Grand Marnier®)
  • 1 tbsp confectioners' sugar
  • 3 tbsps blueberry preserves
  • 1/4 tsp ground nutmeg
  • 1/4 c clarified butter
  • 4 eggs

Directions
  • Step #1 Preheat oven to 500 degrees F (260 degrees C).
  • Step #2 In a mixing bowl, beat eggs well.
  • Step #3 Stir in Grand Marnier & nutmeg.
  • Step #4 Soak bread in eggs for 30 seconds on each side.
  • Step #5 Heat a lightly oiled griddle or frying pan over medium high heat.
  • Step #6 Grill bread until golden brown on both sides, about 2 to 3 mins.
  • Step #7 Transfer to baking sheet & bake this until thoroughly cooked, about 2 to 3 mins.
  • Step #8 Using a paring knife, cut a 2 to 3 inch pocket in one side of each slice of bread.
  • Step #9 Spoon cheese & preserves into the pockets.
  • Step #10 Arrange on plate & dust with powdered sugar.
  • Step #11 Serve with clarified butter & maple syrup.
