Sweet Potato & Fruit Curry Recipe

Ingredients
  • 2 large sweet potatoes, sliced into large chunks .
  • 2 c vegetable stock .
  • 1 onion, finely sliced .
  • 1 1/2 inches gingerroot, peeled & finely minced .
  • 1 tsp cumin .
  • 3 medium green chilies, sliced finely or 1 large hot chili pepper, fimely sliced .
  • 2 garlic cloves, crushed .
  • 1 c canned pineapple chunks, packed in their own juice .
  • 1 tsp garam masala .
  • 1 red pepper, sliced into strips .
  • 2 tsps vegetable oil .
  • 2 tsps coriander .
  • 1/2 c green beans, cleaned & trimmed to 1-2 inch pieces

Directions
  • Step #1 In a large sauce pan, ginger, saute the onion, green chillies & garlic in oil until onion is transparent.
  • Step #2 Add 2 tbsps of the of vegetable stock & the spices to the onions & continue to cook for 3 mins.
  • Step #3 Add the sweet potatoes, green beans & red peppers with the remaining stock to the pan.
  • Step #4 Bring stock to a boil.
  • Step #5 Reduce to a simmer & cook for 15 mins or until sweetpotatoes are tender but retain their shape.
  • Step #6 Add pineapple an cook this until warmed.
  • Step #7 Serve with brown basmati rice.
