Cheesy Squash Casserole Recipe

Ingredients
  • 2 tbsps all-purpose flour
  • 1 c fat free milk
  • 1/2 c soft breadcrumbs, toasted
  • 1/4 tsp pepper
  • 2 lbs yellow squash, sliced
  • 1/2 tsp salt
  • 1 tbsp reduced-calorie margarine
  • 3/4 c shredded reduced-fat Cheddar cheese
  • 3/4 c sliced onion
  • Cooking spray

Directions
  • Step #1 Cook squash & onion in a small amount of boiling water 10 to 12 mins or until vegetables are tender.
  • Step #2 Drain; set aside.
  • Step #3 Melt margarine in a medium-size, heavy saucepan over med-heat/flame.
  • Step #4 Add flour; cook, stirring constantly, 1 min.
  • Step #5 Gradually add milk; cook, stirring constantly, until mixture is thickened & bubbly.
  • Step #6 Remove from heat; add cheese, salt, & pepper, stirring until cheese melts.
  • Step #7 Add squash mixture; stir well.
  • Step #8 Spoon squash mixture into a shallow 1 1/2-quart baking dish coated with cooking spray.
  • Step #9 Sprinkle top squash mixture evenly with breadcrumbs.
  • Step #10 Bake at 350 degrees for 20 to 25 mins or until mixture is thoroughly heated.
  • Step #11 Serve as soon as possible.
