Carrot Carrot Honey Cake Recipe

Ingredients
  • 1/4 tsp salt .
  • 3 carrots .
  • 3 tbsps oil .
  • 1 tbsp water .
  • 1 1/2 c self-raising flour (whole-wheat or plain) .
  • 2 tbsps ginger powder (optional) .
  • 1/4 c honey .
  • 1/4 c sunflower seeds (optional) .
  • 1/4 c applesauce

Directions
  • Step #1 Chop the carrots into chunks & place the carrots & water in a bowl & cover the top this with cling wrap.
  • Step #2 Place in the microwave & heat for 15 min on high.
  • Step #3 Preheat the oven to 350 degrees F/180 degrees Celsius Lightly grease the bottom of two mini loaf pans or one medium loaf pan.
  • Step #4 Place In a large-ish mixing bowl & mash with a fork or potato masher.
  • Step #5 Don't worry if it's not very smooth.
  • Step #6 Add the oil, honey & applesauce & mix.
  • Step #7 Add the flour & salt & ginger powder.
  • Step #8 Mix until even.
  • Step #9 Pour into 2 mini loaf pans or one medium loaf pan.
  • Step #10 Cooking time is similar for both, although you might have to cook for longer if using a medium loaf pan.
  • Step #11 Sprinkle top sunflower seeds evenly on top.
  • Step #12 Bake for 30-35 min if using two mini loaf pans, or 35-45 min if using medium size.
  • Step #13 Allow to cool for a min before turning out.
