Rosemary Cod With Mashed Rutabaga Recipe

Ingredients
  • fine sea salt .
  • fresh ground black pepper .
  • 1 tbsp olive oil .
  • 2 lbs rutabagas, peeled & cut into 1-inch dice .
  • 4 cod fish fillets, skin on (1/2-lb fillets) .
  • 1/2 c butter, cut into pieces .
  • 1 vanilla bean, cut lengthwise & seeds scraped out .
  • 4 sprigs fresh rosemary (very small)

Directions
  • Step #1 Soak the fish in ice water for 15 to 20 mins.
  • Step #2 Pat dry with paper towels.
  • Step #3 Preheat the oven to 400°F (200°C).
  • Step #4 Bring a large pot of water to a boil.
  • Step #5 Add a pinch of salt & the rutabaga & cook for 25 to 30 mins, until soft.
  • Step #6 Drain & then return to the pot & cook over low heat/flame, 1 to 2 mins.
  • Step #7 Puree rutabaga in a food processor/blender & return to pot.
  • Step #8 Add vanilla seeds to the mashed rutabaga.
  • Step #9 (Discard the bean or add it to a canister of sugar to make aromatic vanilla sugar.
  • Step #10 ).
  • Step #11 Stir butter into the rutabaga mixture until it melts.
  • Step #12 Spice up with a pinch salt.
  • Step #13 Keep warm.
  • Step #14 Meanwhile, make a small incision through the skin of each cod fillet & carefully insert a rosemary sprig.
  • Step #15 Sprinkle top with salt & pepper & rub with olive oil.
  • Step #16 Place fish in a roasting pan & cook for about 15 mins, until the fish flakes easily.
  • Step #17 Place a heaping scoop of rutabaga on each plate & top this with fish.
  • Step #18 Serve.
