Ingredients
  • 1/2 c tomato sauce .
  • 3 lbs chickens, cut up .
  • salt & pepper .
  • 3 tbsps flour .
  • 1 c cream .
  • 1/4 c butter .
  • parsley (to garnish)

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Rub the chicken pieces well with salt & pepper.
  • Step #3 Heat the butter In a large-ish skillet & then brown the chicken on all sides for about 15 mins over low heat/flame.
  • Step #4 Remove the chicken to a large casserole, pour over the pan drippings, then cover & cook for 45 mins.
  • Step #5 When the chicken is done, return the pan drippings to the skillet.
  • Step #6 Stir the flour in & add a little more salt & pepper.
  • Step #7 Over low heat, add the cream & the tomato sauce and, stirring continuously, mix thoroughly.
  • Step #8 Place rice or poataoes in the center of a warm platter & surround with the chicken pieces.
  • Step #9 Spoon a little of the sauce over all & pass the rest in a sauceboat.
  • Step #10 Garnish with parsley sprigs.
