Sour-cream Potato Salad - Kartoffelsalat Med Surfløde Recipe

Ingredients
  • 1 c cucumbers, sliced .
  • 1 1/2 c low-fat sour cream or regular sour cream .
  • 3 eggs, hard boiled (only using yolks for dish) .
  • 1 tsp salt .
  • 1/2 tsp white pepper .
  • 1/4 c vinegar .
  • 1 tsp dry mustard .
  • 1 c low-fat mayonnaise or regular mayonnaise .
  • 3/4 tsp celery seeds .
  • 8 c potatoes, sliced .
  • 1 tbsp onions, minced .
  • 2 tbsps sliced chives or scallions (optional garnish)

Directions
  • Step #1 In a large soup pot add uncooked sliced potatoes & water to cover.
  • Step #2 Bring to boil & cook this until potatoes are tender.
  • Step #3 Drain & rinse potatoes.
  • Step #4 Combine the cooked potatoes, celery seeds, onion, cucumber, salt & pepper.
  • Step #5 Toss lightly.
  • Step #6 To prepare dressing mix hard boiled egg yolks with the sour cream, mayonnaise, vinegar & mustard.
  • Step #7 Add to the potato mix & toss very lightly.
  • Step #8 Let stand 15 mins before serving.
  • Step #9 Garnish with chives or scallions.
