Lamb In A Greek Way Recipe

Ingredients
  • 1/3 c seasoned bread crumbs .
  • 1/4 c dried currants (or raisins) .
  • 1 tsp salt .
  • 4 zucchini, about 5-6 inches long .
  • 1 1/2 tbsps olive oil .
  • 1 tbsp fresh rosemary, sliced .
  • 3 plum tomatoes, sliced .
  • 1 tsp oregano, dried .
  • 2-3 tbsps garlic, minced .
  • salt .
  • pepper, freshly ground .
  • 1 lb ground lamb .
  • 1/2 c pine nuts .
  • 1 tbsp fresh mint leaves, sliced

Directions
  • Step #1 Trim the ends off the zucchini.
  • Step #2 Cut the zucchini in half lenghtwise; scoop out the pulp, leaving a 1/4" thick shell.
  • Step #3 Set aside the pulp.
  • Step #4 Sprinkle top interior of the shells with the salt, & lay them, cut side down, on paper towels to drain for 30 mins.
  • Step #5 Preheat the oven to 350*F.
  • Step #6 Cover up a baking sheet with foil wrap.
  • Step #7 Heat the oil in a skillet over low heat/flame, & add the garlic.
  • Step #8 Saute until soft, about 3-4 mins.
  • Step #9 Add the lamb & saute until browned, stirring to break up the lumps.
  • Step #10 Then add the pine nuts, currants, tomatoes, mint, oregano, rosemary, 1 c of reserved zucchini pulp, & salt & pepper.
  • Step #11 Stir & remove the skillet from the heat.
  • Step #12 Cut a thin slice off the bottom of each zucchini shell so it will lie flat, & place them on the prepared baking sheet.
  • Step #13 Fill the shells with the lamb mixture.
  • Step #14 Sprinkle top them with the bread crumbs, & bake for 30 mins.
  • Step #15 Serve as soon as possible.
