Diabetic Blueberry Syrup Recipe

Ingredients
  • 12 oz unsweetened frozen blueberries, thawed .
  • 1 tbsp margarine .
  • 10 tsps artificial sweetener .
  • 1/2 c water .
  • 4 tsps cornstarch .
  • 1/4 tsp nutmeg .
  • 1 tbsp lemon juice

Directions
  • Step #1 In saucepan, mix blueberries with 1/8 c of water, margarine, nutmeg & lemon juice.
  • Step #2 Bring to a boil.
  • Step #3 Reduce heat & let simmer til berries are soft.
  • Step #4 Dissolve cornstarch in remaining water.
  • Step #5 Add to blueberries & continue to cook, stirring constantly, until syrup thickens.
  • Step #6 Remove from head & cool.
  • Step #7 Sir in sweetener.
  • Step #8 Serve warm or chilled.
