Whole Roasted Tandoori Chicken Recipe

Ingredients
  • 1 tbsp garam masala .
  • 1 tbsp fresh ginger, grated .
  • 2 tsps salt .
  • 1 large lemon, juice of .
  • 2 tsps sambal oelek or chili paste .
  • 1 tsp paprika .
  • 1 c cooking yoghurt (8% fat) or drained standard yoghurt .
  • red food coloring .
  • 2 tsps turmeric .
  • 2 tsps garlic powder .
  • 1 (2 1/2 lb) chickens .
  • 1 tsp ground black pepper .
  • 2 tsps cayenne pepper .
  • 1 tbsp mint .
  • 1 tbsp vegetable oil

Directions
  • Step #1 Mix spices & lemon juice.
  • Step #2 Add yoghurt.
  • Step #3 Color with coloring to make an intense red/purple color.
  • Step #4 Add oil.
  • Step #5 Skin the chicken & tie it up nicely.
  • Step #6 Make deep incisions all over the thighs & breasts.
  • Step #7 Put the chicken together with the marinade in a tight plastic bag & massage the marinade with your hands into the incisions.
  • Step #8 Keep put in the fridged for at least 4 but preferably 12-24 hrs, turning the bag now & then.
  • Step #9 Roast the chicken for 30 mins in 200 deg C/400 deg F oven with grill, turning often & patting with any marinade left in the bag.
  • Step #10 Raise the temperature to maximum & roast for another 20 mins.
  • Step #11 The chicken should be well browned & almost black burnt in color.
  • Step #12 Serve with lemon or lime wedges either as an appetizer on lettuce leaves or as a main course with rice.
  • Step #13 In either case, standard yoghurt serves as sauce.
