Step #1 Sift flour with smoked paprika & seasoning.
Step #2 Roll the mackerel fillets in the sifted flour mixture.
Step #3 Shake off excess flour & set the fish aside in a single layer.
Step #4 To make the glaze; put 1 tbsp of the olive oil, the orange zest & juice & the harissa paste into a small bowl, & whisk together.
Step #5 Heat remaining olive oil in a frying pan with until very hot.
Step #6 Fry the fish fillets for 5 mins on the skin side, then on the flesh side.
Step #7 When the fish is nearly cooked (it should look firm), pour over the orange & harissa glaze; bring to the boil & allow the liquid to bubble until sticky.
Step #8 Sprinkle top over the pine nuts & coriander.
