Diabetic Thumbprint Cookies Recipe

Ingredients
  • 1/2 c butter or margarine, softened .
  • 2 tbsps diabetic sugar-free jam or sugar-free jelly .
  • 1 egg .
  • 1/2 tsp vanilla .
  • 3 tsps artificial sweetener .
  • 1/2 c sliced nuts .
  • 1 1/4-1 3/8 c flour

Directions
  • Step #1 Beat together butter, egg, vanilla, & enough flour so dough is no longer sticky.
  • Step #2 Work in nuts.
  • Step #3 Chill until firm enough to shape & roll this into balls.
  • Step #4 Place on ungreased cookie sheet.
  • Step #5 Dip thumb in flour.
  • Step #6 Press firmly in middle of each cookie.
  • Step #7 Bake 15 mins or til golden brown on the bottom (350F).
  • Step #8 Remove from oven.
  • Step #9 Sprinkle top with artificial sweetener.
  • Step #10 Allow to cool.
  • Step #11 Fill hollows with jam or jelly.
  • Step #12 keep put in the fridged.
