Swordfish With Chermoulla Recipe

Ingredients
  • 2 tbsps cilantro, roughly sliced .
  • 3 garlic cloves, crushed .
  • 2 tbsps parsley, roughly sliced .
  • 1/4 c olive oil .
  • 2 tsps lemon rind, finely grated .
  • 8 (150 g) swordfish steaks .
  • 1/4 c lemon juice .
  • 1/2 tsp hot paprika .
  • 1 tsp cumin

Directions
  • Step #1 Combine garlic, herbs, oil, spices, juice & rind In a large-ish bowl; remove half the mixture & reserve.
  • Step #2 Place fish in bowl; toss to coat all over in remaining chermoulla.
  • Step #3 Cover up fish mixure & reserved chermoulla seperately; refridgerate 3 hrs or overnight.
  • Step #4 Remove fish; discard marinade.
  • Step #5 Cook fish in large non stick frying pan til browned both sides & cooked as desired.
  • Step #6 Serve fish drizzled with reserved chermoulla.
